Need to upgrade your lunchtime meal with something more delicious?

Here's the recipe for you! This chicken salad sandwich will be sure to enlighten your taste buds:

Ingredients:

2-3 cans of white chicken chunks, drained (or 2 c. chopped cooked chicken)
1/2 c. mayonnaise
1/2 med. onion, chopped
1/2 green bell pepper, chopped
1/4 c. slivered almonds
1/4 c. dried craisins
Salt and pepper to taste

Instructions:

Mix all ingredients together in a bowl. Taste to make sure you have the proper balance of ingredients and add more as needed. Toast your bread slices; swipe a thin layer of mayo on each side. Place a piece of lettuce on one slice for crunch. Add the chicken salad mixture and enjoy!
