Have you ever wondered what to do with all of those leftovers that clutter your fridge?

Well, here's an idea! A friend of Delilah gave an idea for two nights of delicious food, with the second night using the leftovers from the first.

My friend Dee Dee is the queen of leftovers. I think she knows 101 ways to use leftover ground beef, seriously. She comes up with some delicious creations and she recently shared one with me that is perfect for this busy holiday season. For night one, make tacos. For night two, use the leftovers to make taco pizza! Of course, make sure you have plenty of taco fixings on night one; in my house usually none of it makes it to night two…
Taco Pizza Night
We had tacos last night and I mixed all the usual suspects in the beef that you’d serve on the side, including the olives, Pico de Gallo and spicy refried beans, which thickened up the meat mixture nicely.

We bought some refrigerated pizza dough so I’m making a taco pizza for dinner!  Pizza dough rolled out, layer cheese, meat mixture, salsa, fresh cut onions, more cheese and bake for recommended time on pizza dough. When it comes out of the oven, sprinkle with crushed up taco shells, sour cream, diced tomatoes and shredded lettuce.

I’ve mixed the olives, Pico, refried beans and a chopped up onion in with the ground beef for quite a while since everyone in my family likes all those ingredients already, but if you have someone who’s not a fan of one of those ingredients, you can layer them separately onto the pizza dough and get the same effect.
