Cream wafers are delicious, melt-in-your-mouth, bite-sized sandwiches that are coveted in my family. They may seem work-intensive, but they are SO worth it.

Cream Wafers

2 cups flour
1 cup butter
1/3 cup heavy cream

Mix dough. Chill thoroughly. Roll dough to 1/8-inch thickness. Cut into bite-sized shapes with cookie cutter (my preference is a small cutter with a scalloped edge). Dredge in granulated sugar. Prick with a fork three times, and put on a cookie sheet. The cookies puff up (rather than spread out), so they can be relatively close together. Bake at 400 degrees for 7-9 minutes. Scraps from cutting shapes may be reused no more than twice to get the maximum amount of cookies without damaging the integrity of the cookie.

Frosting

3/4 cup confectioner's sugar
1 egg yolk
1/4 cup butter softened
1 tsp. vanilla
Food coloring (optional)

Mix all ingredients well. Spread on one cookie and make sandwiches. Place on a plate, and dust well with additional powdered sugar.

Store in cool, dry place.

One recipe makes approximately 75 sandwiches; however, we usually bake a double or triple batch.
