Date Cookies

- 1/4 tsp. salt
- 3 egg whites
- 1 3/4 cups confectioners sugar
- 1 tbsp. flour
- 2 cups broken pecans
- 1 cup chopped dates
- 1 tsp. vanilla

Add salt to egg whites; beat to stiff foam. Add sugar sifted with flour, 1 tablespoon at a time; continue beating until very stiff. Fold in dates, nuts and vanilla. Drop from teaspoon onto cookie sheet covered with parchment paper. Bake in slow oven, 300 degrees, for 30 minutes. Makes two dozen.
