A new study finds that full fat dressings used on salads will help your body absorb more nutrients than low-fat or fat-free options.
Officials from Purdue University looked at  how our bodies absorbed the nutrients  in vegetables when coupled with various types of saturated, monounsaturated and polyunsaturated fat-based dressings. They then tested how the blood absorbs fat-soluble carotenoids in the veggies which are associated with reduced risk of several chronic and degenerative diseases such as cancer, cardiovascular disease and macular degeneration. What researchers found is absorption rates were higher when the salad was digested with full fat dressings.
