Jane Harvey's Cutout Cookies

Makes 4 dozen

4 cups sifted all-purpose flour
1/2 tsp. baking soda
1 cup butter or margarine
1/4 tsp. salt (optional)
2 cups sugar
3 eggs
1 tsp. vanilla

Sift together first three ingredients. Cream butter. Slowly stir in sugar, and beat until well blended. Add eggs, one at a time, and beat well. Stir in vanilla. Stir in flour mixture, mixing well. Cover dough, and chill until firm enough to roll out.

Set oven to 350 degrees. Grease cookie sheet (this depends on type of cookie sheet). On floured board, roll out dough, a little at a time, 1/4-inch thick. Cut out cookies with a floured cookie cutter. Put cookies on a cookie sheet, and bake 8 minutes or until golden brown. Remove from sheets and cook on wire rack. Decorate with frosting and colored sugars.
