Skinny Blondes

Beat on medium speed, 1/4 cup unsweetened applesauce, 1/4 cup canola oil and 3/4 cup granulated sugar until well combined.

Then, beat in 1 egg and 1/2 tsp. pure vanilla.

In a separate bowl, whisk together 1 1/4 cup flour, 1/4 + 1/8 tsp. baking soda, 1/2 tsp. salt. Mix dry ingredients into wet.

Mix in one cup of chips (choose your favorite -- cinnamon, butterscotch, peanut butter, white chocolate).

Chill 30 minutes.

Roll into tablespoon-sized balls, and place two inches apart on a baking sheet sprayed with cooking spray or lined with parchment paper (lower fat content will cause these suckers to stick even on a non-stick sheet).

Bake at 350 degrees for 14-16 minutes. (Check after 12 minutes to make sure they aren't done early.) Edges should be lightly golden. Let cool 10 minutes, remove and cool completely on rack.

Makes approximately 24 cookies at about 110 calories each.
