There's always that one dish that every family loves to indulge in every so often.

Here's a favorite of Delilah's and her family, and another recipe to add to your collection of favorites for your family.

I remember when I was a little girl sitting on the kitchen table and sifting through popcorn tin buckets filled with recipes that my grandma and grandpa had collected from clippings, TV, friends, family, and from any other source you could possibly think of over the years. I would sit there for hours with my grandfather and read them. We tried to figure out weird ingredients or wrinkle our noses if they sounded yucky, and laugh endlessly. My grandfather was the big cook in our family. He passed on about 10 years ago. Now, I have popcorn tin buckets I fill with recipes. It’s not very organized but my daughters and I love to sift through them, make our piles, and share expressions and laughs at the names of recipes and ingredients. Jennifer
Delilah's Easy Enchiladas
1 lb. ground hamburger, browned and seasoned with salt and pepper to taste
Soft taco size flour tortillas
4 cups Spanish rice
1 can refried beans all mixed together
2 tsps. of cumin
1 Tbsp. of garlic
2 tsps. of paprika
(or a package of taco seasoning instead of the cumin, garlic and paprika)

Put a generous scoop of hamburger/rice/beans into each flour tortilla. Put one tablespoon of sour cream on top of that, then sprinkle with shredded cheese (I mix cheddar and Monterey jack). Fold like a burrito, ends in first, then roll sides in. Put enchiladas in greased baking pan. Pour enchilada sauce over the top of all, then sprinkle with more cheese. Cover with foil and bake for 30 minutes at 375 degrees.
